Homemakers Corner: Twi-Lite Club

The Twi-Lite Homemakers' first Homemaker Club used to meet at night.

It now meets at 10:30 a.m. the second Thursday morning of the month at different restaurants.

Charter members were Gladys Helm, Carrie Bradshaw, Ada Styers, Bessie Boyd, Jeanette Russell, Mildred Ellis and Helen Timberlin. The present officers are President Alma Catlett; Vice President Patsy McAfee; Secretary Helen Green; and Treasurer Mildred Rousey.

Cranberry Salad

3-ounce box of strawberry Jell-O

2 cups boiling water

3-ounce box of raspberry Jell-O

10 ounces frozen sliced strawberries

1 envelope Knox gelatin

15 1/2-ounce can crushed pineapple not drained

16 ounce can whole berry cranberry sauce

Mix Jell-O water and add thawed strawberries then the rest. Chill several hours.

Baked Chicken Breast

Soak chicken breasts overnight in salt water. Rinse the next day. Dip chicken breasts in olive oil or canola oil then dip in crushed cheese crackers. Bake in oven dish about 1 hour at 350 degrees.

Carrots

Rinse small carrots and cook until tender in salt water. Pour off the water and put in 2 tablespoons of margarine and 3 tablespoons brown sugar and some maple syrup. Heat and serve.

Ding Dong Cake

Take 9- by 13-inch cake pan and grease the bottom. Cut wax paper to fit bottom of pan. Bake a devil's food cake by recipe on box. Put wax paper on cake pan lid. Lift the cake onto lid.

Peel off wax paper. Take a thread and cut a place on back corner and pull the thread through. Put one half of cake back in the pan. Then mix 2 cups of confectioners' sugar and 8 ounces Cool Whip. Mix together and put on cake in pan and then put the other half of the cake on top. Ice the cake with a can of chocolate icing.
