Farmers Market: Faves showing up at market

Everyone's favorite, fresh local tomatoes and sweet corn, are coming in now. These goodies and more will be at the Boyle County Farmer's Market this week.

Vendors will set up from now until Nov. 1 at the Boyle County Fairgrounds. Hours are 8 a.m. until 6 p.m. Tuesdays and Thursdays, and 8 a.m. until 3 p.m. Saturdays. See you there!

This week look for:

* Freshly baked breads: potato bread; white and whole wheat; whole grain; sourdough; Amish Friendship Bread* Assorted baked goods* Homemade granola* Homemade jams & jellies* Pickled beets* Dried apples* Dried dip mixes* Fresh cut flowers

Fresh local produce:

* Blueberries* Cabbage* Chard* Corn* Cucumbers* Green onions* Herbs* Kale* New potatoes* Roma green beans* Squash - yellow, scallop and zucchini* Stringless green beans* Tomatoes* White half-runner beans* Yellow beans

To make your Farmer's Market shopping experience even better, we now have fresh, hot coffee available at our information booth.

Stop over for lunch. The pulled pork barbecue sandwiches are fantastic. Buffalo burgers, beef burgers and soft drinks are also available.

Recipe of the week

Compliments of Bush Farms

This is one of our family's summer favorites. The combination of fresh basil and fresh tomatoes in this easy-to-prepare dish is outstanding.

Tomato-Basil Tart

1-1/2 cups grated mozzarella cheese, divided1 9-inch pie shell, baked5 Roma or 4 regular, medium-sized tomatoes1 cup loosely packed, fresh basil leaves4 cloves garlic1/2 cup mayonnaise1/4 cup Parmesan cheese1/8 teaspoons white pepperChopped fresh basil leaves for garnish

Sprinkle 1/2 cup mozzarella cheese on bottom of pie shell.

Cut tomatoes in wedges and drain on paper towel. Arrange wedges on cheese.

Process basil and garlic in food processor until coarsely chopped. Sprinkle over tomato wedges.

Combine remaining 1 cup mozzarella cheese, mayonnaise, Parmesan cheese and pepper. Spoon evenly over basil mixture to cover the top.

Bake at 375 degrees for 35 to 40 minutes. Garnish. Serve warm.

Makes 4 main dish servings or 8 appetizers.
