Farmer's Market: Cooking corn-on-the-cob can be quick and easy

Shop early for your favorites at the Boyle County Farmer's Market this week.

Vendors will set up from now until Nov. 1 at the Boyle County Fairgrounds. Hours are 8 a.m.-6 p.m. Tuesdays and Thursdays, and 8 a.m.-3 p.m. Saturdays. See you there!

* Freshly Baked Breads: potato bread; white and whole wheat; whole grain; sourdough; Amish Friendship Bread* Assorted baked goods* Homemade dog biscuits* Homemade granola* Homemade jams and jellies* Relish and pickled beets* Dried dip mixes* Fresh cut flowers* Handmade quilts

Our lunch wagon is back this week with homemade soft drinks like root beer and cream soda plus pulled pork sandwiches and more!

To make your shopping experience safer: We have roped off the market area. Parking is located at either side. Although you can no longer drive through the center of the vendor areas, customers requiring assistance may park behind vendor tents. We will be happy to accommodate you.

Recipes of the week

BruschettaCompliments of Rolling Fork Farm

1-1/2 pounds tomatoes, chopped2 cloves garlic, minced1 tablespoon olive oil6 to 8 basil leaves, choppedSalt and pepper to taste

Mix toppings in a bowl and set aside. Can be made ahead and refrigerated but serve at room temperature.

Loaf of bread, sliced 1/2-inch thick1/4 cup olive oil

Brush bread slices with olive oil and grill on low to medium heat until toasted. Serve the toast and topping separately and have guests put topping themselves.

Fried Green BeansCompliments of Mamaw and Papaw's Garden

3 cups tenderette green beans1/2 cup slivered almonds1 onion, chopped1/2 stick butter

Slice beans thin. Put in skillet with butter, almonds and onion. Cook on low heat until tender, about 20 minutes.

Quick and Easy Corn-on-the-Cob

Pull shucks down just a little. Remove tuft of silk at the top. (Don't worry about the silk on the ears, as it will be easy to remove after the corn is cooked.)

Pull shucks up over the corn. Place ear(s) in microwave and cook on high heat for 4 minutes.

Your corn will be cooked perfectly. YUM!
