Chicken salad recipe is quick, easy on the budget AND delicious

Take advantage of recipes that don't require cooking, Clark County family and consumer science extension agent Jennifer Howard said. One example, she said, is the Fun Summer Chicken Salad, from the University of Kentucky's Cooperative Extension Service cookbook.

Fun Summer Chicken Salad

2 cups cabbage, coarsely chopped

1 package (3 ounces) chicken flavored Ramen noodles, broken up, uncooked

2 cups cooked, chopped chicken

1 can (11 ounces) mandarin oranges, drained. Save juice for dressing.

1/4 cup green pepper

Dressing

1 seasoning packet from chicken flavored Ramen noodles

2 tablespoons sugar

2 tablespoons white vinegar and 2 tablespoons oil, or 4 tablespoons Italian dressing

Juice from canned mandarin oranges

Wash hands. In a large mixing bowl, add all salad ingredients. In a small bowl, add all dressing ingredients and stir together. Add dressing to salad and toss. Makes 10 servings.

"You could even use leftover chicken or buy rotisserie or canned chicken," Howard said. "If you have an abundance of tomatoes, you could use one and stuff it."

This dish also can be prepared ahead of time.

After guests are done eating, make sure to immediately refrigerate food. According to Howard, when temperatures are under 90 degrees, food has two hours un-refrigerated. When the temperature creeps up above 90, food only has one hour un-refrigerated.
