From the Farm: Farmers Market opening day is on the horizon

The countdown for Farmers Market Opening Day: only four more weeks. We look forward to seeing everyone again on May 7.  
I will begin to list the first offerings of the season in the coming weeks. Cool weather crops like lettuce, onions, spinach and more will be ready soon.
Your favorite vendors will be returning along with a few new faces. The Boyle County High School FFA will be selling flowers and plants as a fundraiser. The proceeds will go towards travel and expenses to their annual convention.
The Boyle County Farmers’ Market has been approved to accept WIC vouchers this year. We also have EBT and Debit Card capabilities for your convenience.
We had a very windy but beautiful weekend. It was perfect for mowing and catching up on home repairs as well as working in the garden.  
Thankfully, my son, Jon, doesn’t mind heights. He has been up on the roof replacing shingles that blew off in that last big storm we had. I don’t know what we would do without his continuous help.
With all this warm weather, thoughts turn to salads, iced tea and cook-outs. Most everyone loves the convenience of “store-bought” salad dressings.
Making your own fresh dressings is easier than you think. Many are done ahead and chilled so the flavors can blend.
You can serve this recipe at room temperature or chill until you are ready to use. It is has very low fat making it great for those who are reducing calories and fat in their diets.

Spicy Mango Salad Dressing

1 large mango, peeled, seeded and chopped
1⁄3 cup seasoned rice vinegar
1⁄4 cup lime juice
3 tablespoons brown sugar
1 tablespoon almond oil (or other mild oil)
2 green onions, minced
1 clove garlic, minced
1⁄2 tablespoon fresh ginger, minced
1⁄4 teaspoon salt
Black pepper to taste
Combine all ingredients in a large jar. Place a tight-fitting lid on jar. Shake until well-blended. Chill (or serve at room temperature). Serve over fresh green salad.
NOTE: If using oil other than almond, you can add a few slivered almonds for the salad for more flavor and crunch.
