Nutrition Month celebration gets under way today

One celebration that you can begin and continue for a life time is that of Nutrition Month.

Like other holidays we celebrate, there are many activities you can adopt as traditions for your family. All of us need to eat a variety of foods each day and we can best do this by eating food selections from all the food groups. Why not try a new nutritious recipe or add a new fruit or vegetable each week? You could even be brave and try whole grains!

Here are some other tips to start your celebration:

— Make half your grains whole;
— vary your veggies;
— focus on more fruits;
— choose calcium rich foods;
— go lean with protein;
— and don’t forget physical activity.

As you join the celebration of National Nutrition Month, try this recipe for broccoli potato soup.

Broccoli Potato Soup

4 cups chopped broccoli, frozen works too
1 small chopped onion
4 cups low sodium chicken broth
1 cup evaporated nonfat milk
1 ½ cups instant mashed potatoes, prepared with water
Salt and pepper to taste
¼ cup shredded cheese

Mix broccoli, onion and broth in a large sauce pan. Bring to a boil. Lower heat, cover and simmer about 10 minutes or until the vegetables are tender. Add milk to soup. Slowly stir in potatoes. Cook and stir until bubbly and thickened. Season with salt and pepper; stir in a little more milk or water if soup starts to become too thick. Sprinkle 1 tablespoon cheese over each serving. Nutrition facts: 200 calories per 1 cup serving; 6 g total fat; 2 g saturated fat; 10 mg cholesterol; 350 mg sodium; 25 g total carbohydrate; 2 g fiber; 15 g protein.
