Here's how: First, soak your wood chips in water for at least an hour before you will need to add them to the coals. Second, instead of placing your charcoal in the middle of the grill, put it to one side.

You can leave the grill open or closed when using this cooking method. Meats and poultry tend to brown quickly on the outside, but may not be thoroughly cooked on the inside.

Here are some important grilling safety tips to follow: When using a grill be sure and place it on a flat surface, away from fences, plants, overhangs, deck railings and buildings. Also, make sure and position the grill in a well-ventilated area. LIBERTY — Leonard Walls isn’t accused of a crime but he was on trial much of Tuesday morning in Casey Circuit Court.   Defense attorney Mark Stanziano spent nearly two hours cross examining Walls, trying to paint a portrait for jurors of a man tortured, unstable and desperate enough to drink antifreeze in hopes of regaining his granddaughter’s waning affections.   Stanziano did not question Walls aggressively or score any major “gotcha” moments, but he did press him steadily, jumping from topic to topic — sometimes very personal ones — until Walls finally seemed weary and confused.
