Fresh Kentucky salad greens are a sure sign of the spring garden season! Whether you choose to grow your own or purchase from our farmer's market vendors, delicious salad greens make a refreshing and nutritious statement for your family meals. As you know, Bibb lettuce was developed by Major John Bibb in his Frankfort backyard. He soon shared his plants and seeds with friends and it became known as Bibb lettuce. There are many popular leaf lettuce varieties available including arugula, which has small, flat leaves with long stems and is similar to dandelion leaves with a peppery taste.

The recent days of extreme heat have made many of us scale back in the kitchen. While we may skip recipes that would require us to use our ovens, we don't have to skip on taste and good nutrition. Fresh vegetables are beginning to be harvested in backyard gardens and many of our Farmers Market Producers are selling local grown produce now as well. A great way to use these fresh vegetables and not spend a lot of time in the kitchen is with salads. Homegrown tomatoes are one vegetable that benefits from our hot, humid summer days.

Salads are perfectly light, yet satisfying, and are a great way to incorporate all the beautiful fresh, seasonal summer fruits and vegetables taking over the grocery store produce department. Below are few simple salad suggestions, to make that humble bowl of lettuce a refreshing summer meal. The Greens:  Start your salad with a strong foundation of hearty greens. Iceberg, romaine, or green leaf lettuce are all a great start.

The library was located in the front of the school, as all school libraries should be. Across the wall in that library were biographies of great Americans. I think I read most of them because, though they were short, they were really good. In fact, most libraries across the country had them on their shelves.
